Introduction

Ingredients

    1/2 cup uncooked quinoa
    2 cups frozen sweet corn
    1 - 15 oz. can black beans, drained and rinsed
    1 large red pepper, chopped
    1 cup cherry tomatoes, chopped
    1/3 cup cilantro, chopped
    4 green onions, sliced, using as much greens as possible

    Dressing:
    2 Tablespoons extra-virgin olive oil
    2 limes, juiced
    2 Tablespoons ground cumin
    1-2 teaspoons Tabasco sauce

Directions

Makes 6 servings

Rinse quinoa until water is clear. Cook, uncovered, in 1 1/2 cups water until water is absorbed and seed is tender. Set aside to cool while preparing rest of salad.

In a large bowl, combine the frozen corn, black bean, chopped red pepper, chopped cherry tomatoes, green onions, and cilantro.

In a small bowl, whisk together the dressing.

Add the quinoa and dressing to the large bowl and toss to combine.

    Quinoa is a very small pearl like grain. It's higher in protein than a lot of grains.

    Followed your recipe as best I could, was missing two ingredients, but it still came out delicious. Mine was a bit heavy on the black beans,. The dressing was wonderful against the sweetness of the corn.
    I think I can even get my youngest to eat quinoa this way, Thanks!
