Ingredients

    Red Wine Vinegar, 4 tbsp
    *Extra Virgin Olive Oil, 2 tbsp
    Cucumber (peeled), 1 cup, sliced
    Seasoned Salt, 1 tbsp

Directions

Peel and slice a medium size cucumber and put in a bowl. Whisk all other ingredients in a separate bowl until mixed well. Pour over cumcumbers. Let chill for at least one hour before serving. Makes 2 side dishes. *** Add a small amount of fresh dill for a little extra kick.

    There is a Korean side dish very similar to this. I use natural rice wine vinegar, equal ratio of sugar (or agave or splenda) and vinegar, and no oil. You can also add thinly sliced onions, carrots, and sesame seeds. It's a good side dish to any protein and a good way to use up a cucumber. - 2/28/10

    I think I'd like to add slivered onions to this and use Enova instead of olive oil to cut out fat. I will have to see if it's just as tasty, though! - 3/16/07
