Nutrition & Calorie Comments  

There is a Korean side dish very similar to this. I use natural rice wine vinegar, equal ratio of sugar (or agave or splenda) and vinegar, and no oil. You can also add thinly sliced onions, carrots, and sesame seeds. It's a good side dish to any protein and a good way to use up a cucumber.
I think I'd like to add slivered onions to this and use Enova instead of olive oil to cut out fat. I will have to see if it's just as tasty, though!
I cut the salt in half to reduce the sodium content and it was quite tasty.
