Ingredients

    1 cup fresh lemon juice
    1 cup fat-free chicken broth
    2 Tbsp Olive oil
    8 Medium Garlic Cloves
    4 Tbsp Dried Oregano
    3 pounds boneless skinless chicken thighs (about 16 thighs)
    1 sparys of cooking spray
    1 pounds uncooked new potatoes cut in half about (10 small potatoes)

Directions

Makes 8 Servings

Place Lemon Juice, broth, oil , garlic and oregano in a large resealable plastic bag or large glass bowl. Add chicken, seal or cover, and marinate at least 2 hrs or up to overnight in refrigerator.

Preheat oven to 350 F. Coat a 9 x 11 in pan with cooking spray

Place chicken and marinae in pan: add potatoes. Bake 60 minutes, or longer for softer potatoes. Yeilds about 2 chicken thighs and 3 potatoes per serving.

    This recipe has way too much lemon! The flavor is overpowering and needs to be toned down a bit. Also, I found the potatoes soggy. The marinade has too much liquid. Less lemon juice and chicken broth will give this dish a more roasted, rather then braised finish. That is my plan next time. - 2/18/13

    This is an excellent recipe, the house smelled amazing while it was cooking. I do daycare and all the mom's want the reciepe. My family loved it too! - 2/6/09

    This recipe was good, the chicken was delicious. I've never had boneless chicken thighs before and they were incredibly tender and moist, even after cooking for 70 minutes.
    The potatoes need a little tweaking. After 1 hour and 10 minutes my potatoes were still pale and firm.

    WONDERFUL!! Made this and served it with greek rice (regular rice with chicken bullion, lemon, butter and greek seasonings). My husband almost fell out of his seat when he tasted it! My 3 year old loved it too! - 5/27/08
