Introduction

Ingredients

    1/4 cup dry lentils
    1/4 cup uncooked brown rice
    2 tsp olive oil
    1/2 cup grated carrot
    4 med mushrooms diced
    1/2 small onion diced
    1 cup water
    1/2 tsp salt
    Oil spray or 1tsp oil for cooking burgers

Directions

preheat oven to 325
heat the water to hot, not boiling
mix all other ingredients in an oven safe casserole dish
add the water, cover with foil and bake for 50-60 minutes until all the water is absorbed and the rice is tender.
Stir up thoughly and refrigerate unitl cold. Gently form 4 patties. You can oil your hands or use wax paper.
Slow cook them in a non-stick pan until brown on both sides.

    wow. eating it now straight out of the oven and tastes great. didn't have mushroom so used about a half cup diced red pepper. i dont really see how this would form into patties either though? tasty nonetheless, split into 3 portions (one being eaten) the other two to go in the fridge. - 2/15/09

    Very dry and doesn't want to hold together. I've added eggstarts for that. Not my favorite vegetarian burger though. - 8/2/10

    Didn't have carrots so maybe that's why these tasted so rice and lentil heavy. They were pretty good, had them like suggested and they shaped into burgers just fine, maybe don't overcook the rice and lentils, time them and it works. It made almost a dz big burgers. I've frozen the rest. - 5/11/10

    Tried this today with my own twist. I did not have lentils, so I used a can of red kidney beans. I also added some seasonings that I like. I had to add an egg and 1/2 c bread crumbs to get them to stay tog. - 1/19/10
