Ingredients

    1 lb fresh or frozen cod
    2 Tbls. margarine
    1 Cup sliced fresh mushrooms
    1/2 Cup sliced green onions
    1/4 tsp. dried tarragon or thyme, crushed Paprika

Directions

Rinse thawed fish and pat dry with paper towels. Cut into 4 serving-size pieces if necessary.

Arrange fish in a 2-quart rectangular baking dish, turning under the edges, sprinkle with salt.
In a small saucepan, melt margarine; add mushrooms, onions and tarragon. Cook over medium heat till tender. Spoon mushroom mixture over fish; sprinkle with paprika.

Bake covered at 450 degrees for 12-18 minutes

    Incredible!
    Delicious and easy. We substituted tilapia. Added a couple of cloves of garlic and some chopped shallot to the mushroom mixture. After it cooked down some, added some marsala wine and reduced it a bit. Thyme complimented the other flavors well. Ate it with a side of mashed cauliflower. Yum! - 9/11/10
