    Ingredients
    1/2 cup egg white
    1/4 cup ground flax seeds
    1/4 cup ground almonds
    1/4 cup Splenda granular, sugar substitute
    1/2 cup natural-style peanut butter
    1/4 cup ricotta cheese
    1 teaspoon vanilla
    1 teaspoon baking soda

Directions

Directions
1 Preheat oven to 350°F.
2 Melt peanut butter in microwave for 1 minute or until smooth.
3 Mix all ingredients together.
4 Pour into mini muffin cups (24 cup tray), and bake 15 minutes.

    I love these muffins and keep them on hand at all times. I have a wheat intolerance and these give me something that resembles a "real" muffin. I use Stevia instead of sugar to cut down on calories and my sugar intake, and add just a pinch of salt to the recipe. Thank you for this recipe! - 6/13/11
