Introduction

Blueberries really make the colors and flavors pop. Blueberries really make the colors and flavors pop.
Number of Servings: 1

Ingredients

    2 cups fresh spinach
    1/2 cup chopped tomato
    2 green onions
    1/4 cup blueberries

Directions

Chop tomatoes and green onions. Toss with spinach. Top with blueberries. Makes one serving.

Nutritional information does not include dressing. I find that a balsamic, raspberry, or oriental dressing works best to compliment the salad.

    I can't wait to try this recipe. I tried a similar one with strawberries and it was terrific! I like blueberries even better than strawberries so this recipe should be awesome. - 6/30/10

    We eat at least 2 of these a week. I leave out tomatoes,substitute different fruits. IE: dragon fruit, asian pear,kiwi slices,star fruit,strawberries,blood orange pieces,then drizzle with just a touch of olive oil. Someitmes I use Spring Greens Mix too. - 3/27/18
