Introduction

Rich, dense brownies made with applesauce and zucchini! Rich, dense brownies made with applesauce and zucchini!
Number of Servings: 40

Ingredients

    1/2 C Applesauce
    1 1/2 C white sugar
    2 t vanilla extract
    2 C all purpose flour
    1/2 C unsweetened cocoa powder
    1 1/2 t baking soda
    1 t salt
    2 C shredded zucchini
    1/2 C chopped walnuts (optional, not included in nutritional analysis)

Directions

Preheat oven to 350 degrees. Spray a 9 x 13 pan with nonstick spray.
In a large bowl, mix together the applesauce, sugar, and vanilla until blended. In another bowl, combine the flour, cocoa, baking soda and salt. Stir the dry ingredients into the wet ingredients. Fold in the zucchini and nuts, if using. Batter will appear dry, but will moisten with the zucchini.
Spread ino the prepared pan.
Bake for 25-30 minutes, until brownies spring back, and tester comes out dry.

Sprinkle with powdered sugar just before serving if desired.

Makes 40 small (1 1/2 inch) brownies.

    I made this recipe and everyone seems to love it. The only issue I have is with the portion size. 40 pieces from a 9x13 is very very tiny. I had to put the recipe in again and recalculate for 24 pieces and it still came out to just under 100 (96 cal). So you can have bigger still under 100. - 6/10/10

    I had a monster zucchini and made two batches. The only change I made was to add some semi-sweet chips. Everyone who's had these kept saying "There isn't ANY butter in this???" They are so moist and completely satisfy a chocolate craving. Dee-lish! - 8/17/10

    I was unsure about them,but very surprised when I ate them...it's more like a dense cake then a brownie...I also used 1 c splenda and 1/2 c sugar because I ran out of sugar...that was a mistake... it leaves a sweet splenda taste in your mouth..next time using all sugar or less splenda! - 6/2/10

    Yum! The family keeps asking for these. Used Splenda an egg, some walnuts and drizzled honey on top. The batter was pretty dry so I added just a little water.

    Made these again with only 1c flour and still added an egg. This makes them very moist where the orig. is more dense. I like them both way

    Excellent recipe. Husband and son loved it and didn't realize it had zuchinni in it. (I used my vitamix machine to chop the z. so it was quite fine.) I used whole wheat flour and added a bit of ground flaxseed and oat bran. - 8/8/09

    made these last night as per recipe (which I almost never do), only adding some turbonado sugar over the top before baking. WOW these are good!!! I had an old recipe for zucchini brownies but am so glad I tried this no-fat version. I did cut into 24 pieces rather than 40 - can't imagine that small.. - 8/3/11

    I have a bumper crop of zucchini so I was happy to find a recipe that uses them. I used 1 cup sugar and 1/2 cup Splenda and they turned out great. - 8/3/10

    Sounds wonderful But you must make sure that you get 40 pieces from this recipe because if you do not your calorie count will be much higher. - 8/21/09

    This cake-like brownie was delicious. I added 1 heaping tablespoon of honey to keep the brownie moist. I also mixed the very fine shredded zucchini with the wet mixture before adding the dry ingredients. - 6/23/14

    I just made a double batch. One 13x9 has raisins in the other just walnuts.
    I made a double batch and I used only 11/2 cups of sugar and we like them they are dark chocolate brownies. the raisins are great in them. Dark chocolate brownies. Thanks.Pat in Maine.

    Fantastic! I added 3 TBSP of milled flaxseed, 1/4 C chocolate chips, a little water, and just a drizzle of olive oil because the batter was very dry. I also used whole wheat flour rather than bleached. I used a mini muffin pan and ended up with 42. My kids loved them! - 7/16/12

    I made these last night, without walnuts. I substituted Splenda for the sugar, and grated the zucchini very fine so you could not tell it was even in the final product. The flavor is good, without being too sweet. I added a dash of cinnamon just to give it a little kick. Yum. - 7/28/11

    I made it exactly like the recipe, no changes. Very good brownies! My neighbors, kids, husband, father ... everyone loved them. My 4yo did say it "tasted" more like cake or bread than a brownie.     I tried making these tonight and they did not turn out the way they were supposed to. I mixed the ingredent wrong so I am hoping that is why. It is to bad as the pasts that did get cooked and brownie like tasted awesome!! Will try to make these again. - 9/15/09

    Based on other reviews, I added one egg and 1 TB of oil. I also added 1/4 of fiber powder. The result was VERY moist! The product was more cake-like than brownie, but probably due to the changes I made to the recipe - which negates that "fat free" label - oh well! Will make again! Yum! - 8/31/09

    These were great! I made them twice in 3 days. I used a 9x9 pan and baked them for 45 mins. Hence, I made 16. I ate so much of the chocolate batter before adding the zucchini that when I added the full 2 cups, my brownies came out even richer and more moist than normal. Thanks! - 8/29/09

    I tried this recipe and it was really dry after baking...wondering if my zucchini was not fresh enough? Since everyone else raved about it, I obviously had something wrong. Anyway, it was a bad experience and I don't plan on making brownies without oil and eggs again. ( < : - 8/26/09
