Introduction

This is a great slow cooker side dish that's incredibly easy to make! This is a great slow cooker side dish that's incredibly easy to make!
Number of Servings: 8

Ingredients

    1 pound dry white Northern beans
    1 c onion, diced fine
    2 slices bacon cut into small pieces
    1/4 c brown sugar
    1/4 c dark molasses
    1 T brown mustard
    2 T ketchup
    1/2 t salt
    1/2 t black pepper
    3 c water

Directions

Soak beans in water overnight. Drain and rinse. Place all ingredients into a slow cooker; set on low. Cook for 6 hours.

Editor's Cooking Notes:
Omit the bacon to make these vegetarian.

    Canned beans do not make Boston Baked Beans. I'm from Boston and I had them frequently growing up. You need the slow cooking and the soaking to make them great.

    Some people have never tried this and just doctored up canned beans. NOT EVEN CLOSE.

    I've only had baked beans a couple of times, and I'm pretty sure they were canned. But I wanted to give this healthy version a try. And let me tell you, you will not regret trying this! The only change I made was to use dijon mustard and turkey bacon because that is what I had on hand.DELICIOUS! - 1/28/10

    Yes you need the full amount of water. canned beans are already cooked and have absorbed the water. Now for my taste I like a bit more ketshup and a tbl. of liquid smoke.
    NIce recipe.Also for canned beans you need more moisture to prevent schorching in a crock pot. Otherwise bake them. Chef Jim

    tastes very good -
    but something does not add up - the total of the ingredients is way over 4 cups (3 cups water alone !!!) - so it can't possibly be 8 x 1/2 cup servings - it made over 8 cups when I made it

    The pound of beans is 16 oz (2 cups). When the water is added and they have cooked, they'll double in volume (4 cups). Divide that in half for half-cup servings=eight 1/2 cup servings.

    I didn't see any difference between this and the recipe on the back of my dried beans except that one doesn't have ketchup. Glad to know I don't have to give up my crockpot baked beans! We love them. - 1/19/10

    When I first learned to make baked beans, I used a BEAN POT - much like a crock pot only you use it in an oven. I loved home made beans and adapted to my own liking, but way too high in calories. Will try this one for a healthier version.
    And NO, I can't eat just 1/2 cup unless its as a side dish

    Great adjustments. I think if you have hard water, your beans will have trouble softening. It's the hard water plus salt that causes the problem. Leave out the salt and add it later. That may help. - 1/21/10

    All I have to say is that I have followed this recipe TO THE LETTER and after 10 hrs on low, my beans were still crunchy. I put them in the fridge overnight, and now I am on day 2, 4 hrs later (now 14 hrs cooking) and they are still slightly crunchy. Cook on HIGH ladies! flavor is nice though! - 7/12/10

    No molasses, so I use dark brown sugar. I also use low sodium tomato sauce or paste (depending on what I have)rather than ketchup; add a dash of Worcestershire and garlic. Have used canned beans (drained and rinsed THOROUGHLY), only a little water added, when pressed for time, almost as good. - 1/21/10

    great flavor, not too sweet so hubby loved them. needs long soaking time. I tried boiling water soaking for 1 hr, came out too hard even with overnight cooking! next time either overnight soak as recommended or cook on high with more water in pot. I'll experiment.     Of course people can eat only 1/2 cup of beans. It's a side dish, not the whole meal! When we eat beans I only have 1/3 of a cup and feel completely satisfied! Great meal! - 1/21/10

    Well, I can't give a rating rate. So far my beans have been cooking for 8 and a half hours and THEY ARE NOT DONE YET. Yes, I followed directions, including soaking. I'm very disappointed. Have to have something for dinner tonight.l - 3/7/10

    I tried this in my crockpot. Soaked the beans overnight, then put them in. The beans NEVER got soft. I left them in for WAY LONGER than it said to do, thinking that EVENTUALLY they'd get soft. They were edible, but chewy. We threw most of it out. I will not make this again. - 5/18/10

    It seems like a lot of water with moisture from all the various ingredients. Wouldn't it be soupy? Could the water be cut by a third or half? When in a hurry, I drain the canned beans real good, add my onions and bacon, a small bottle of BBQ sauce for 6 cans of beans and it still has extra juice. - 11/2/09

    Followed the directions exactly. Was watery and lacked the taste of a traditional Boston Bake that I have had in the past which was also from scratch. Took much much longer than 6 hours on low and needed to cook on high for about 40 minutes to get all the wateriness out of it. - 4/11/10

    Funny! My husband already has Boston Baked Beans in the oven using his Mom's recipe. She doesn't use molasses or ketchup. He used Splenda Brown Sugar instead of the real stuff. It always turns out really good!!! - 1/21/10

    I'm making these right now and my slow cooker is filled ... to the brim. I think it's about a 3-quart cooker. When I cook chili in it, it makes five servings of about 2 cups each. That would be twenty servings of a half cup each. I'm thinking the nutritional values on this recipe are wrong - 2/21/10

    I am a bean queen, I LOVE BAKED BEANS!! Eating canned beans is like pouring catsup on filet mignon`! I have left my crockpot on low for 12 hours, no prob,, it costs about five cents a day!! Try it!! I would use splenda and low salt, low sugar Oscar Meyer bacon too.. thanks for the portions MEg!! - 12/4/09

    Oh this looks yummy and simple. I cook my beans in the crock pot all the time. I don't bother presoaking though, just turn on the crock pot on low and cook for about 4-8 hours, depending on the bean. I'll try presoaking! Seems like a great way to conserve energy.     I made these today. Used honey instead of molassas. 9 year old and Husband LOVED them. Baked in oven at 300 for 6 hours did not use slow cooker. Will make these again for sure. Yum. - 1/18/11

    Great recipe, much better than I expected. I added a tad extra molasses, splenda brown sugar and regular mustard instead of brown. The beans soaked overnight and I cooked the beans in the crock pot for 3 extra hours to get the consitency right and the water soaked in. Hubby and I both loved them. - 1/12/11

    Beans must be preboiled according to 'crockpot' instruction, which in my case was 1 1/2 hours.
    The bean package says 30 minutes, but this is when you cook them in the oven after. Beans will be crunchy! Look in your crockpot manual for recommendations for preboiling!

    I make these regularly during the winter months. For those that think the water is to much, you need a lot of moisture. When I make mine I soak the beans all dy and bake them through the night. I usually check them at midpoint abd they require more water. They soak up all of it by serving time. - 7/8/10

    Even my kids love them! Not too much sodium and not too much sugar. I omitted the molasses because I didnt have any and also I used bullseye bbq sauce instead of ketchup.
    This does make more than 4 cups of beans though. The beans absorb LOTS of water overnight!

    The beans were not done after six hours on low and two hours on high. I thought it was OK; family thought it was bland. To be honest I used yellow mustard instead of brown (first time I've heard of brown mustard) and mild flavor molasses. I don't know how much difference it makes. - 11/13/09

    This was a really good recipe but it didn't work for me in the crockpot. After cooking it for the recommended time there was still a lot of liquid and the beans weren't tender so I put it in the oven. The seasoning was really good though. - 3/17/11

    I followed the recipe, omitting the bacon and the salt. I tried to do a nutritional evaluation and found that just the serving size of bacon and salt was much higher than the total count. Am I missing something? It smells great - having it tonight. - 1/13/11

    I'm also from Boston and have made homemade Baked Beans in a Bean Pot, but we used a piece of Salt Pork.and baked them in the oven. but this sounds just as good using the crock pot. - 11/10/10

    Ever since I was a kid and my babysitter made beans each and every day for lunch I have loved beans. I don't stop at 1/3 C. These are good, extremely good! Don't they make turkey pepperoni that is very low in fat that could be used in them? Apples is new idea, I like a bunch! Thank you! - 1/21/10

    When soaking beans add either 1 tablespoon raw apple cider vinegar or 1 or whey from draining plain yogurt. this helps to break down the antinutrients in the beans and makes them more digestible. Also cook then for 10 minutes first before adding to slow cooker. - 3/16/11
