This was really good. Used tricolor quinoa, green pepper with the onions and added diced cherry tomatoes when I put in the beans. I also used Penzy's Adobo Seasoning instead of just Cumin. Served with kale salad and it was delicious! Didn't use the corn but would be good too! - 1/11/14

This is an EXCELLENT recipe and a perfect addition to my weight loss nutrition regimen! I prepared it pretty much by the directions (except 1 cup/2 cups quinoa/water) and it was absolutely delicious. My roommate is an excellent cook and very particular about what she eats and even SHE loved it! Thx! - 4/19/11

Pretty good but a little salty. I'm going to use less bouillon next time. We ate ours with some fresh salsa, and it overcame the saltiness a little. Other than that, pretty good! - 2/12/10
