Number of Servings: 6

Ingredients

    1 sprays olive oil cooking spray, or enough to coat pot
    1 medium onion(s), coarsely chopped
    15 oz canned pumpkin
    3 1/2 cup fat-free chicken broth
    15 1/2 oz canned white beans, rinsed and drained
    1/4 tsp ground oregano
    1/8 tsp table salt, or to taste
    1/8 tsp black pepper, or to taste
    Parmesan cheese for garnish

Directions

1. Spray pot with cooking spray (1-2 seconds)
2. Combine all ingredients except parmesan in crockpot.
3. Cover and cook on low setting for 8-10 hours.
4. Serve garnished with 1 Tbsp grated parmesan .

    Made this soup today and shared it with all my coworkers and my husband - EVERYBODY LOVED IT! I altered it a little: I added an extra can of beans a little bit before serving and I added about 1/2 cup of skin milk to make it a little creamier. I also used VEGETABLE broth (vegetarian). - 11/18/11

    What is the serving size? How many servings does the recipe make? Why is the recipe in the veg section when it calls for chicken broth? How does substituting veg broth affect the calorie count and micronutrients? Recipes like this annoy me. - 3/21/18
