Introduction

This is another mod on a Rachel Ray 30 minute meal. I used laughing cow cheese (only 30 cals each!) instead of the cheese that she suggests along with a little less olive oil. Ingredients

    1lb Turkey Breasts (4 pieces)
    4 Laughing Cow Light Wedges (any flavor will do, I like the Garlic and Herb)
    2 cups fresh spinach
    1 can diced tomatoes (14 oz)
    1 Tbsp olive oil
    1 Tbsp fennel seed
    1 tsp oregano
    salt and pepper to taste

Directions

Pound each of the 4 pieces of turkey out to about 1/4 inch. Spread the cheese on half of one side of each turkey breast (one wedge per piece of turkey). Put 1/2 cup of spinach on top of the cheese, fold the breast in half and use toothpicks hold the turkey together and keep the filling in. Season turkey with salt and pepper. Heat the olive oil in a large skillet over medium heat. Cook the turkey for a few minutes on each side, until browned. Add the canned tomatoes, fennel seed and oregano (or any other spices you desire). Let simmer approximately 10 minutes until turkey is fully cooked and most of the juice from the tomatoes has thickened.

    Loved this recipe!!! I also used feta cheese and a little bit of herb and garlic cream cheese it added a nice flavor.
    I also used fresh tomatos and a little water with lots of added spices. Delicious!!!
    As for the toothpicks...if you weave them in and out of the turkey it seals really well.

    We really loved this meal and will be for sure having it again. The only thing I had a problem with was flipping the breasts with the toothpicks in them. Next time I will have to think about how I put them in, but it was really good. The fennel seed makes it kind of minty, just FYI. Yum! - 9/9/09

    Just tried this. It was OK. Not great not bad. I used breast tenderloins and plain cheese. I cut the tenderloins in half and didnt need toothpicks. It would be easier and tastier with b/s chicken thighs. Easy way to sneak in some spinach! Will try with a few variations. Thanks. - 3/14/14

    Great. I added some garlic and onion for more flavor. Add 1/4 cup,of wine to sauce and seve over whole wheat pasta for a side - 1/15/12

    Not enough flavor or cheese. If I do it again I'll add more. The toothpicks I don't think did much. Also 1lb of Turkey breast was 2 breasts. - 9/17/09
