Ingredients

    4 cups thinly sliced raw potatoes
    1 onion
    1 tablespoon chopped parsley (optional)
    3 tablespoons whole grain flour
    1/8 teaspoon pepper
    1 1/2 teaspoons salt
    3 tablespoons low cholesterol margarine
    1 1/2 cups skim milk


Directions

1. Layer potatoes and onions in casserole, sprinkling flour between each layer.

2. Heat milk and margarine and season with salt, pepper, and parsley. Pour sauce over all layers.

3. Bake 1 hour covered at 350° F. Remove cover and bake additional 30 minutes.

Makes 6 servings.

    I used less salt than called for. I added about a cup of part-skim mozzerella. I only used 1 Tablespoon of Margarine. It was wonderful! The child and hubby loved it. Next try, I'll use olive oil instead of marg and Mrs. Dash instead of salt and pepper. Family says I should make it tomorrow. Winner! - 9/26/08

    Saw the recipe, I happened to have two potatoes I needed to do something with, so I thought "Why not try this recipe." Boy it was the best idea i ever had. Easy to make, had all the ingredients WOW is it good. Have added it to my cookbook, definitely will make again. - 7/13/09

    For those of you adding cheese, please remember that cheese is high in sodium. This reicipe is high enough as is. For me I will add onions and lower the salt. That should get it in an even better range than it already is. Thanks for posting this recipe! - 9/16/08

    I waited to rate this, until I could try it as I am a big fan of scalloped potato's. It was delicious. I also love onions, so it was just the right amount for me. I tried to give it a 5 stars but for some reason it was stuck on 3. I will make these over and over again!!!!! - 3/15/09

    It was easy to make. I would make this dish again and probably add MRS DASH EXTRA SPICY to give it a little kick. I like onions in my potatoes, the flour was different fo me. I usually use Corn Starch. - 2/7/08

    This is a nice simple dish to make. It's a bit on the bland side, though I've added nutritional yeast and extra spices to give it a bit more oomph. Slicing potatoes in the food processor makes it a ton easier! Thanks for the tip! - 12/6/07

    I made this same recipe last night on my own but I did not use any margarine. My version included whole wheat flour and no parsley. I mixed the flour with water and poured it over the potatoes with the skim milk already added. I also added some ham chucks left over from Sunday dinner. YUMMY! - 4/11/08

    I made this last night at it turned out great!!! The only thing I did diferently was to make a roux out of the margarine and flour and then add the milk to it and let it thicken up a bit before layering it with the potatoes and onions. No one even knew it was low fat!!! - 8/19/10
