Mashed Plantains and Onions
Found this recipe on Epicurious. I cut back a bit on the fat (less oil and butter), switched leeks with an onion and used FF plain yogurt instead of sour cream. Also used almonds instead of pecans.
It is a hearty dish and you can reduce more calories by eating a smaller portion, but it was very tasty and worth it!!
