Ingredients

    ~ 2 tbsp butter melted (I used Earth Balance Vegan spread)
    ~ 2 tbsp honey
    ~ 1 tbsp fresh lime juice
    ~ 1 tsp ground allspice
    ~ 1 tsp grond cinnamon
    ~ 2 plantains (used yellow/black ones)
    Salt and freshly ground pepper to taste

    Thyme sprigs for garnish (optional)

Directions

1. Preheat the oven to 400 F. Coat a large baking dish or a roasting pan with oil (I used baking spray)

2. In a large boal, stir the butter, honey, lime juice, allspice and cinnamon together until blended. Add the plantains slices and toss to coat. Arrange the slices in a single layer in the prepared dish or pan. Season with salt and pepper.

3. Bake the sweet potatoes for 25 minutes, or until tender and slightly carmelized. Transfer to a bowl and garnish with thyme sprigs, if you like.
