Ingredients

    2 ea- Plantains ripe
    1 cup- Pineapple small diced
    1 cup- Strawberries sliced
    2 tbs- Honey
    1 oz- Fresh lime juice
    1 tbs- fresh mint chiffonade

Directions

Heat oven to 350 degrees. Slice plantains down center length wise. Spray sheet tray with non-stick spray and place cut side down. Place in oven and roast until fork tender, around 25 minutes.
While in oven peel and dice pineapples and slice strawberries. Add to bowl and add honey, mint and lime juice. Mix and set aside.
Remove plantain peel cut in half and top with salsa and serve.
