Introduction
Found this recipe on Epicurious. I cut back a bit on the fat (less oil and butter), switched leeks with an onion and used FF plain yogurt instead of sour cream. Also used almonds instead of pecans.It is a hearty dish and you can reduce more calories by eating a smaller portion, but it was very tasty and worth it!! Found this recipe on Epicurious. Ingredients

3 ripe plantains, ends trimmed and cut crosswise into thirds
1 cup chicken broth
1 tbsp butter
1 tbsp & 1 tsp olive oil
1 large onion finely chopped
5 cloves finely chopped garlic
thyme
parsely
6 oz. fat free plain yogurt
cumin
Directions
Bring a large pot with water and the chicken broth to boil. Add plantains. Reduce heat to medium and cover and simmer until plantains are tender and yellow-orange. Approx. 30 minutes. Drain and reserve 1 cup of cooking liquid. Cool plantains and then peel.
Transfer plantains to bowl along with 1/2 cup of broth. Mash until smooth. Use more broth if necessary. Set aside.
Melt butter with the olive oil and saute onion and garlic until brown. Stir in thyme and parsley. Add onions to the mashed plaintains and stir. Let stand at room temp.
When ready to serve, heat in microwave until thoroughly heated through. Add yogurt and cumin
Serve and enjoy!!
