Ingredients

    2 VERY ripe plantains (peel should be BLACK)
    4 tblspns olivio (or butter)
    1 tsp cinnamon
    1 tsp vanilla extract
    2 tblspons brown sugar

Directions

cut the ends off the plantains and the slice lengthwise along the peel to get all the peel off. slice through them lengthwise and cut them into two or three pieces for each half.

heat the olivio or butter in a large skillet over medium-low heat (plantains can burn easily if heat is too high) and fry the plantains in a single layer, wiating for the first side to get golden brown before flipping to brown the other side.

after browning the 2nd side, add cinnamon and vanilla and brown sugar and let cook for a few more seconds to carmelize the sugar.

serve immediately. a 1/2 a plantain should be one serving.
