Introduction

My Colombian schoolmate made these sweet, caramelly plantains (or Plátanos Calados) and served them in arepas. Traditionally they're eaten with queso fresco as dessert. Ingredients

    1/3 cup panela (or coconut sugar or light brown sugar)
    1 tbsp honey
    2 cinnamon sticks
    1 vanilla bean, split and scraped (keep the pod)
    ˝ tbsp salted butter
    2 large ripe (black) plantains, peeled and cut into chunks
    1 large *just* ripe (still a hint of green) banana, peeled and cut into chunks

Directions

Combine the panela, honey, cinnamon, vanilla seeds and pod, and butter in a small pot and melt together into a syrupy mixture.
Add the plantains and banana, then cover and cook over medium heat for 15 to 20 minutes, stirring often.

Serving Size: Makes 4 servings
