I tried this recipe when visiting in Maine at a little country flea market and I personally am not a fan of Rhubarb. When I have a chance to get Rhubarb, I grab it now!
Also my spouse doesn't know there is Rhubarb in it and he loves it. The Rhubarb and blueberries compliment each other.

This is a GREAT summer recipe to bring to a cookout! It looks so pretty in a trifle bowl ($10 Bed Bath & Beyond.com), takes no time at ALL to make and no one will guess its a healthy treat!
I put 12 servings in the nutritional info but that is a good size serving - even half that would definitely suffice!
Also - using the vanilla sugar free pudding cuts the cals a decent amount and doesnt sacrifice taste at all.
This uses less egg whites than most. Less than 100 calories per serving!

This recipe has been adapted from Kraft but changed to reflect low fat at 80 calories per serving rather then 160.

So good and good for you too. All you need are three ingredients and you're set to go.
Basically you can use these in any combination. More apple sauce, more rhubarb, more sugar or add in some cinnamon or nutmeg depending on what you like.
For dietary needs this meets a bunch! Vegetarian, Low Fat, Low Sodium (high potassium) and Lactose Free.
Make sure to just have one (you can do it!) and track this as part of your sweet treats for the day!!
