Introduction

This is absolutely wonderful and low fat but doesn't taste like it. The lemon flavor is very rich and full and great for fresh blueberries just picked from the bushes. This recipe has been adapted from Kraft but changed to reflect low fat at 80 calories per serving rather then 160. This is absolutely wonderful and low fat but doesn't taste like it. Ingredients

    1 1/2 Cup skim milk
    8 oz tub of fat free whipping topping (like cool whip) thawed
    1 cup blueberries
    1 tbsp lemon juice
    32 reduced fat nilla wafers
    2 (4 servings each) lemon sugar free, fat free instant lemon pudding/pie filling
    4 oz (1/2 block) of fat free cheese cream softened

Directions

LINE bottom and sides of 8-inch square dish with wafers; set aside.

BEAT cream cheese in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mixes and lemon juice; mix well. Whisk in 2 cups COOL WHIP and berries. Spoon into prepared dish.

REFRIGERATE 3 hours or until set. Serve topped with remaining COOL WHIP.

    I am also going to make this this Memorial Day weekend. I plan on just putting one waffer in the bottom of a tiny tart cupcake paper w/tin rather than; having double the wafer on the sides and corners of a square pan. Also I can change the fruit to strawberries on 1/2 of the receipe. - 5/25/11

    This is an awesome recipe but I made it exactly as listed and it's more than 80 calories a square. I used 25 wafers instead of 32 and used 2 cups of Cool Whip in the mix (with none on top). The whole pan is 1454 calories or about 90 calories for a 2"x2" square. - 7/6/10

    Incredible!
    This was so good I can't even tell you in words. A def must try. It was the best dessert at the party I took it to, the pan had been scraped clean. I will say that it was too hard to serve as cut squares so I just put a spoon in it and served it like you would Banana Pudding. It was delicous. - 6/6/11

    I needed a recipe that was easy enough for a bunch of five year old to make and still hold nutritional value. The responsabilities of a Scout Leader! This recipe was not only easy but it allowed the girls to switch the fruits to their favorite one and match it with pie filling or instant pudding. - 10/25/09
