Introduction

This is a great alternative to having Pizza, along with your servings of vegetables. This is a great alternative to having Pizza, along with your servings of vegetables.
Number of Servings: 8

Ingredients

    4 cups Grated Zucchini (3 Medium)
    12 oz Mozzarella Cheese, part skim milk
    1 Extra Large Egg
    1 14 oz can -- Contadina Crushed Tomato with Italian Herbs
    8 oz 93% Ground Turkey

Directions

Heat oven to 400 Degrees

1. After Grating the Zucchini, Blot out the water.
2. Mix Together: Grated Zucchini, 6 oz Mozzerella Cheese (Reserve other 6 oz) and Egg.
3. Spread mixture into a cookie sheet and place in oven for 4-5 minutes.
4. Remove from oven and then spread the can of Crushed Tomato.
5. Sprinkle the reserved mozzarella and the ground turkey on top.
6. Place pan back in oven and cook for about 15 minutes.
7. Remove, cool and cut into 8 slices

    Quite tasty! I added a bit more turkey and used diced tomato instead of crushed. More filling then you would think but you may need to have 2 servings to call it dinner. I might cook the zucchini a touch longer to help dry it up a bit more before adding toppings. This one is a keeper. - 7/27/09

    Were you able to get the crust crunchy? I loved the taste, but I must have done something wrong with the crust- it was really soggy (not much of a "crust") Any suggestions? I did blot the zucchini, and I cooked it for about 15 minutes before adding the toppings. - 8/28/09

    I thought it was good, but spinach pizza is my favorite so I added spinach to the top to get additional flavor and iron. I liked the results. - 8/25/09
