Introduction

if you like spicy peanut buttery asian food, you'll like this sandwich.

note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. it doesn't really taste any different.

Ingredients

    * 2 slices of Ezekial sprouted sesame seed bread. (or bread of your choice. i use Ezekial because it's higher protein)
    * 1 serving tofu, sliced. (1 serving is about 1/5 a block)
    * 1 tablespoon peanut butter
    * 1 teaspoon Sriracha (or more to taste)

Directions

lightly toast the bread.

spread the peanut butter and sriracha onto the bread.

add the sliced tofu. (you may optionally heat the tofu in the microwave first or place the entire sandwich back into the toaster oven for 5 minutes.)

    Sriracha is a spicy asian condiment. It comes in a big plastic squeeze bottle. It has a rooster on the bottle. You can find it at most large super markets in the asian section, or at asian grocery stores.

    It was a very nice alternative to pbj. I could not find sriracha so I used Asian garlic hot chili sauce...perhaps it is the same. I am trying to get away from meat as much as possible and this will provide variety for lunch at work. - 8/8/11

    So simple! And satisfies my desire for spicy Thai flavors! Next time I might add jullienned carrots for crunch, or use crunchy peanut butter instead of smooth. - 11/6/10

    I love this recipe! I ended up assembling the ingredients at home and toasting them in the toaster oven at work. (I used Mori-Nu tofu, so I wasn't worried about the tofu spoiling.) So good! - 11/5/09

    yum.....This is what I had in mind for dinner today except the bread and then I saw this recipe...I like the firm lite Tofu...n I try to marinade the tofu in sriracha for 3-4 hours, adds the zing in the inside of the tofy too. - 11/2/09
