This was great! Since I didn't have cooked chicken, I thawed frozen chicken breasts, put them in a baking dish with the tomato products and baked, covered, in the oven. While the chicken was baking, I made the rice. Then I added the rice to the pan. Everyone in the family loved it! Thanks! - 1/8/08

I followed someone's advice about black beans and corn and rotell and it was really filling. I used a whole wheat wrap the second day it was really good. I kept the rice separate so I could freeze the leftovers and even have it on my baked potato. - 4/10/11

Very good! I make something very similar to this but use a can of Rotel instead of the tomatoes & peppers, puree and onions, and substitute thyme and cumin for the chili. I also add a can of black beans and a cup of frozen corn. - 9/14/10

You can't beat this as a fast nutritious week day meal. Soooo easy. I did add some salt. I mixed brown rice with white rice... just because I I had a bit of brown to use up.. it worked. - 8/17/08

I prefer to make it pilaf style, cooking the rice in broth with precooked chicken, several veggies, & plenty of cumin & turmeric. (Click on my name if you'd like to try an alternative recipe.) - 7/7/08

When we make Arroz con Pollo, we always add sliced green olives. Gives it a tang that isn't spicy hot. - 3/6/19

    What is tomato puree?

This sounds very good, but the calorie count is way off on the chicken. There is no way 6 oz of chicken is only 33 calories as according to the nutrition breakdown. 6 oz is closer to 200 calories so this recipe per serving should be closer to 400 calories. - 5/6/13

Awesome! I like spice but others don't so I just added crushed red pepper flakes to my portion after putting it on my plate. - 7/22/11

This looked like it needed a little spice to me (my family likes food VERY spicy) so I sauteed some onion, green pepper, fresh garlic, and fresh jalapeno and then added the rest to make the sauce. I also added corn after the chicken. Very Good!

A little too bland as is for my family but by adding garlic , chopped onions instead of dried, and red pepper flakes and using brown rice (I never make white rice any more as there is no health value to it) we truly enjoyed it! - 7/5/08

I thought it was great. You can even put it over spaghetti instead of rice. I added whole green beans and they gave added vegetables. My husband, who never likes diet food, enjoyed it too. - 8/4/07
