Ingredients

    7 cups cooked pasta
    2 large potatoes
    2 cups cherry tomatoes
    1 can tomato soup
    2 tbsp olive oil
    1 onion
    1 cup frozen peas
    1/3 cup black beans
    1/3 cup chickpeas
    1/3 cup black olives, pitte and diced
    2 tbsp balsamic vinegar
    Italian seasoning
    6 cups water

Directions

Chop onion, saute in olive oil until translucent.
Add chopped potato, cook for 5 minutes.
Add remaining ingredients, cook while stirring over medium heat until pasta and potatoes are soft.

    Very Good
    This is delicious. I have no problem with the 303 calories. I usually take soup for my lunch and it's going to take at least that many calories to get me through the rest of the day. I calculated the serving size to be approximately 1 1/2 cups. I would have appreciated that information. - 9/15/10

    Sounds yummy but way too many calories for me. Not willing to sacrifice over 300 for a bowl of soup and not much protein. :-( - 2/14/09

    Classic Italian Wedding soup is: chicken mini-meatballs, chicken stock, Cannellini (White) Beans, Pearl PAsta or Pearl Barley and Escarole or Spinach, as well chopped onion. - 9/24/08

    The amount of calories with a slice of homade wheat bread sounds like a good meal to me.The calories come from good sources of the varity of nutuitional foods that I read about in these in SP pages.I can fit it in to my program.Thanks...Chef Jim,I added 1/4cp.flax meal to the mix. - 9/23/08

    beans, chick peas, sweet peas, pasta and potatoes will all blend well but the amounts can be halved to save on calories. The reason for the variety is how wedding soup got it's name. But I agree with too much starchy veggies. Nice flavoring though! - 9/23/08

    Sounds really good but I would have to leave out something to reduce the calories. Maybe the potatoes, some of the pasta and reduce the olive oil. Broth based soups should be more filling with less calories. - 9/23/08
