Ingredients

    300g (1-1/2 cups) sugar
    60g (3/4 cup) unsweetened cocoa powder
    90g (3/4 cup) whole wheat flour
    30g (1/3 cup) ground flax seed
    73g (2/3 cup) oat bran
    1-1/2 tsp. baking powder
    1-1/2 tsp. baking soda
    1 tsp. salt
    2 eggs
    1-1/3 cups buttermilk
    2 T. oil
    2 tsp. vanilla
    1 cup boiling water

Directions

Preheat oven to 350. Spray 9"x13" baking pan with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together buttermilk, eggs, oil and vanilla. Stir into dry ingredients until mixed. Add boiling water and stir until combined. Pour into prepared pan and bake for about 35 minutes. Makes 12 servings.

    This sounds fantastic! I replaced one cup of the sugar with Splenda to cut even more calories, but I wouldn't dare mess with the other ingredients. Fiber-loaded and really nutritious for a chocolate cake. Thank you!!! - 3/30/10

    This cake is awesome. I loved it as is, but actually made it with 1/4 c. of unsweetened applesauce in lieu of the oil and also added 1/3 c. protein powder. It is excellent. Has become a staple in my kitchen - 10/16/08

    Great! I even accidentally baked it at too high a temperature and it still turned out great. (And I used applesauce instead of oil and cut mine into 15 pieces-yay! Lower calories!) Thank you! - 5/18/10

    Incredible!
    This is a DELICIOUS cake! Makes a perfect breakfast, or even a desert! A spoon or two of milk over it is all you need to bring out the sweetness! It's a lot for 1 person, so i gave some away. Next time I'll probably half the recipe. I would definitely recommend this one! - 11/4/08
