Introduction

Ingredients

2 cups almonds
1/2 cup flax meal
1/2 cup dried, shredded coconut
1/2 cup almond butter
1/2 teaspoon sea salt
1/2 cup coconut oil
2 tablespoons honey (more or less, to taste)
1 tablespoon vanilla (yes, that's a TABLEspoon!)
Directions
Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor Pulse briefly, about 10 seconds In a warm dehydrator, ‘melt’ coconut oil. Stir honey and vanilla into oil. Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste. Press mixture into an 8×8 glass baking dish Chill in refrigerator for 1 hour, until mixture hardens
Remove from refrigerator, cut into bars and serve.
OPTIONAL: Top with cacao frosting!

She melts dark chocolate, pours it over the bars and spreads it with a spatula. She also adds maple syrup. We love these! A great peanut free snack for school and my DH takes them to work. - 3/26/15

this seems very interesting and i would like to try it! is there anything i can substitute the coconut oil with? maybe a different kind of oil? - 1/9/10

You might could, but the fact that coconut oil is solid at cooler temperatures is really what holds this together. If you try another oil I would use a mild flavored oil unless you use another type of nut-oil. Let me know how it goes if you try it!
