Ingredients

    1 lb. shrimp ( (21 - 30 count)
    3/4 c. low fat italian dressing
    2 c. sliced fresh mushrooms
    1 small onion, sliced
    1 can (14 oz.) artichoke hearts, drained, cut in halves
    1 Tbsp fresh parsley
    2.5 cups cooked pasta
    1/4 c. grated parmesan cheese

Directions

COOK and stir shrimp in 1/2 c. of the dressing in a large skillet on meium-high heat 2 min.

ADD mushrooms, onions, artichokes and parsley.
Continue cooking until shrimp turn pink and vegetables are tender, stirring frequently.

TOSS with hot cooked pasta and remaining 1/4 c. of dressing in large serving bowl. Sprinkle with cheese.

    Wonderful recipe. Didn't have access to fresh shrimp so sauteed the veggies till tender, and added cooked shrimp last for approx 5 minutes. Hubby says this may be one of his favorites which says a bunch cuz he is a meat and pots type of guy. - 4/9/08

    I made this today and loved it! However, I used pre-cooked shrimp and they ended up being tough - I think I cooked them too long. Did you use precooked or raw shrimp when making this? - 5/31/07

    If you use pre-cooked shrimp I would wait to add them until the end. They would be overcooked, hence, tough if you add them in the beginning.

    I cooked the shrimp in one tsp olive oild then blended the ingredients and chilled and used this as a cold salad. Its excellent that way as well - 5/28/07

    Incredible!
    This was a nice change! Yum Yum! Next time I will put the remaining dressing on the noodles and then serve the noodles and put the rest of the stuff on top, I made too many noodles and had to search for veggies. LOL But none the less it was still great! - 1/24/12
