Ingredients

    3 cups soy milk
    1/4 cup raisins
    1/4 cup sugar
    2 teaspoons margarine
    1 cup couscous
    1 teaspoon vanilla
    Cinnamon for sprinkling on top
    Soy Creamer (Optional)

Directions

*Put the soy milk, raisins, sugar, and margarine in a saucepan and bring to a boil. Remove from heat
*Stir in the couscous and vanilla. Cover and let stand 5 minutes.
*Serve warm or cold sprinkled with cinnamon.
*(You may pour on additional soy milk or use soy creamer - Silk makes a good creamer -but that's not included in the nutrition information so you will have to count it separately.)

    This was very good--a nice alternative to oatmeal. In case anyone is wondering about the serving size, I measured, so hard to know otherwise. I did not add the fruit (planning on adding some fresh strawberries to the top), but without the fruit the recipe made 4 cups, so a serving size is .5 cups - 11/12/10

    I LOVED this recipe! We had it as a warm dessert and it hit the spot! I used Truvia instead of sugar and dried cranberries instead of raisins. We will definitely be having this more often! - 10/11/10

    I made it with milk and honey. After trying it I spruced it up with some cinnamon and sugar. That made it good enough to finish, but I don't think I'll be making it again. - 10/13/11

    couscous wasnt cooked before? is 5min of heat enough to be cooked? :/ - 3/11/11

    You don't need to cook couscous over heat. Just stir it into the hot liquid and let it sit for 5 minutes. There are usually instructions on the couscous package
