Ingredients

2 cups diced carrots
2 cups diced celery
1 medium onion
3 quarts chicken broth
3 cups pear barley dry
1 tbsp. olive oil
2 chicken breasts with no skin chopped in chunks
Salt to taste
Pepper
Directions
Chop chicken into small cubes and brown in half of olive oil. Remove from pan. Saute carrots, celery, and onions in other half of olive oil until soft (around five minutes). Add the mushrooms, barley, chicken broth, and chicken. Cook 2 hours stirring often.

I notice that other reviewers did not make recipe exactly as directed.I just made this recipe and 3 cups of dry barley is too much.I had to add a total of 5 qts of chicken broth and I just simmered the soup.The recipe still has a very good taste but makes a lot more soup. Half the barley amount. - 8/19/13

I used left over rotisserie chicken, and homemade stock (made with the bones of the chicken), added ~ 1/2 cup frozen peas & 2 T sun dried tomatoes (mostly for color). Great taste and quite filling. This along a whole grain slice of homemade bread was just perfect for an easy Sunday supper. - 8/21/11

Mushrooms weren't listed in ingred. so I didn't have them. Added water chestnuts, plus canned tomatoes. Used veggie broth, no chicken ( to make vegetarian ) Use bigger pan than you might think, as barley expands.
I can add tofu or soy crumbles if I want to to indivd. servings. dh, chicken, et - 1/30/10
