Introduction

A high protein mookie - a muffin & cookie combo! Sort of like a cookie, sort of like a muffin...very tasty! High protein, low fat.

Milk free! (I recently added 1/4 cup of margarine to the recipe... they taste better with margarine. But, margarine can be omitted!)

Ingredients

    I jar unsweetened Apple Sauce (approx 1 1/2 cups)
    2 bananas, mashed
    1/2 Cup Splenda Brand Brown Sugar Blend
    2 Eggs
    3 Tsps Vanilla Extract
    1/4 cup light margarine or butter (optional)

    1 1/2 Cups Flour
    1 Tbsp Cinnamon
    2 tsps Nutmeg
    1 tsp Baking Soda
    2 1/2 Cups Rolled Oats (instant worked fine)
    1/4 Cup Wheat Germ
    1/2 Cup Protein Powder (chocolate or vanilla, or desired flavor)
    1 Tbsp Cocoa
    1/4 Cup Chocolate Chips (optional)

Directions

Mix dry and wet ingredients separately. Mix together. Spoon onto greased (light Pam) cookie sheet. Bake at 350 degrees for 10 minutes.

    I added some flaxseed, used half of the butter, and only used egg whites. I also had to substitute carnation protein breakfast essentials for protein powder since I didn't have any..
    They still turned out Amazing!! Love it! Thanks

    Oh my these were good! Great taste and size and they really did make me full. Everyone loves them and then I tell them they're healthy and they can't believe it. I think next time I'll leave out the chocolate chips and add nuts and raisins.

    O.K.
    These taste OK. The texture is kind of rubbery, it's hard to get past that. It looks like the recipe has changed since I printed it on 4/8. 2 bananas instead of 1, less nutmeg, baking soda and the optional butter were added. Maybe this would help, but I don't think I'll make them again. - 4/11/09

    Sorry you didn't like them.

    I did change the recipe a bit the next day, as I posted the recipe within minutes of coming up with it. So, I added a couple of things to perfect the recipe.

    :) I added some light margarine to the recipe tonight... it makes them a bit tastier. Also, you might want to add some more chocolate chips if they're for kids :)
