Ingredients

1/2 medium head of cabbage, cored and chopped
3 apples, cored and diced (leave skin on)
1/2 small onion, chopped
2 tbsp cider vinegar
1/4 cup sugar
1/2 tsp salt
dash nutmeg
bay leaf
1 1/2 lb boneless pork roast, trimmed of visible fat
Directions
In a 4.5-qt slow cooker, combine all ingredients except pork roast and stir. Mash down a bit if you feel like you don't have room for your roast (it will seem very full at first but the cabbage will cook down quite a bit). Place unseasoned roast on top. Cook on low for about 8 hours or until roast is at least 160 degrees in the center.

I do this without sugar.
Cabbage apples and onions are sweet, we find the addition of the sugar spoils it. I like to add some dark green too, it enhances the color and nutrition I always use a tenderloin for this, just my modifications. I am diabetic and rarely use any sugar. Thanks for the recipe. - 2/16/13

Made the recipe exactly as written. Was very quick, easy and delicious. I feel that it actually makes more than four servings if you eat a moderate sized portion and serve with a side. Served with naan bread at one meal and with brown rice at another meal. Definitely adding to my go-to recipes list. - 7/14/15

This recipe makes 4 servings, so just take your yield when it's done cooking and divide it into 4 equal servings. :) Actual serving size can vary slightly so I find this is the best way for me.

The first time I made it in the crockpot, it seemed to make the veggies and fruit way too mushy and the pork quite dry (I always cut off all of the fat), but the second time in the oven at 375 for 2 hours, it turned out DELISH. I did NOT put in any sugar--the apple and onion were sweet enough. - 3/25/13

mm so tasty I put no salt in mine used honey and allspice instead of sugar and nutmeg..put in 3 small onions. when it was done I sliced up the roast , heated up the frying pan and cooked of the liquid ..I made wholewheat salt free Pita pocket.. then stuffed them with meat and cabbage mix...mmm mmm - 5/7/12
