Number of Servings: 6

Ingredients

    1 cup onions, diced
    1/2 cup green or red peppers, diced
    2 T. olive oil
    3 cloves garlic
    2 T. italian seasoning
    2 cans diced or whole tomatoes
    12 oz. ground beef, 95% lean
    1 lb. whole wheat elbow pasta, cooked

Directions

Brown lean ground beef. Transfer to colander and rinse. Set aside. In the same skillet, sauté onion, pepper, and garlic in olive oil. Add Italian seasoning, salt and pepper to taste. Add canned tomatoes and ground beef. Bring to a boil, lower to medium low, and simmer for approx. 30 minutes.
In a separate pan, cook pasta. Whole wheat elbows work best. Drain and add to beef/tomato mixture.
Serve immediately.

Serving size 1 1/2-2 cups. Serves 6.

    This is an Italian-style macaroni dish, not chop suey. Chop suey has bean spouts, celery, mushrooms, etc. - 4/18/12
