Ingredients

    1 1/2 C. rolled oats
    1/2 C. Oat bran
    1/4 tsp. salt
    1/4 C. applesauce
    1/4 C. coconut shredded
    2 bananas mashed
    1 tsp. vanilla exstract
    1 Tbsp. baking powder
    1/4 C. egg beater (or 1 whole egg)
    1/4 C. molasses


Directions

Preheat Oven to 350 degrees, line muffin pans with liners

In large bowl combine: applesauce, egg, molasses, bananas & vanilla until smooth.
Mix in rolles oats, oat bran, baking powder & salt.
Fold in coconut (or dried fruit, slices nuts, etc)
Fill muffin lines 1/2 way with batter

Bake 20-25mins - until egdes are light brown

    For all those commenting about the oats and gluten. My sister was just diagnosed with ciliac disease, and I've been researching (I'm a nurse), and discussing with one doc I work for who has ciliac also. At this time, there is no definitive decision as to whether or not oats can be considered free. - 9/16/10

    Oats do not contain gluten! The only reason you have to purchase gluten free oats is because most oats are processed in plants that also process items that contain gluten. Gluten free oats are processed in facilities that don't process items that contain gluten. - 8/19/10

    These were very tasty. I didn't have molasses so I used honey and doubled the amount of coconut. Very easy to make. - 3/28/11

    I made this recipe this morning, but increased the coconut from 1/4 to 1/2 cup, otherwise, I followed the recipe exactly as written. The recipe only made 12 muffins, and I had to stretch the batter out to get the 12 muffins. The only way this could yeild 16 muffins is if you made mini muffins. - 11/18/10

    This recipe is NOT gluten free unless you're very careful! Oats usually contain gluten, but you can buy gluten-free oats at some stores...I find mine at Woodmans. Also, the way that vanilla extract is processed it isn't gluten free unless you buy specifically gluten free vanilla. - 7/8/10
