Ingredients

    1 Pillsbury refrigerated pie crust, softened as directed on box
    1 1/2 cups mashed canned sweet potatoes or yams
    2/3 cup packed brown sugar
    1 tsp ground cinnamon
    1/2 tsp ground allspice
    1 cup whipping cream
    1 tbsp lemon juice
    2 large eggs beaten

    sweetened whip cream for topping

Tips

We tried this also with a homemade graham cracker crust and it actually tasted like gingerbread. Pretty good.


Directions

Heat oven to 425. Bake pie crust as directed using 9 inch glass pie pan. Place sweet potatoes, brown sugar, cinnamon, allspice, whipping cream, lemon juice and eggs in blender or food processor bowl with metal blade. Cover and blend until smooth. Pour pie into pie crust-lined pan. Bake 15 minutes. Reduce temperature to 350 and bake 30 to 40 minutes longer or until center is set. Cool completely (45 minutes) and serve with whipped topping. Store in refrigerator.
