Introduction

Use 2 heaping tablespoons of fresh, grated ginger for a delicious cookie. If none on hand, then use 2 tablespoons of ground ginger. Use 2 heaping tablespoons of fresh, grated ginger for a delicious cookie. If none on hand, then use 2 tablespoons of ground ginger.

Ingredients

    1.5 cups sunflower or canola oil
    2 large eggs
    2 cups brown sugar
    0.5 cups unsulfured molasses
    4.5 cups unbleached flour
    2 tbsp ground ginger
    1.5 tbsp baking soda
    1 tbsp cinnamon
    1 tbsp cloves
    t teaspoon salt

Directions

Mix oil, eggs, sugar and molasses in a bowl. Hand mix other ingredients in a separate bowl and add to oil and egg mixture. Mix until a silky dough is achieved. Cover and refrigerate overnight.
Preheat oven to 350. Roll dough into a ball in the palm of your hands. Toss in granulated sugar. Bake for 8-10 minutes.
(instead of refrigerating the dough overnight, I usually roll the balls right away and then store in a freezer bag in the fridge - the next day I put the bags in the freezer - I then bake a few from frozen whenever I need some)
