Introduction

Ingredients

1.5 cups rice flour (finely ground or the bread will be crumbly)
.5 cup potato starch
.25 cup tapioca flour
3/4 tsp xanthan gum
2 Tbsp vanilla flavored instant creamer
2 Tbsp granulated sugar
2 tsp baking powder
1 tsp baking soda
1/2 cup raisins
1/2 cup milk
3 Tbsp oil
1 large egg
Directions
Preheat oven to 350. Prepare an 8 " pie pan or a baking sheet by greasing bottom, then shaking a little rice flour around 'til coated on bottom (or use parchment).
Mix first 3 ingredients (flour). Set aside 1/2 cup of the mixed flour.
To the 1.75 cups left, add xanthan gum, baking powder, creamer, baking soda, sugar and mix. Mix raisins in until individually coated.
Whisk wet ingredients together. Add to dry and blend until smooth. You'll need to form dough into a mound, so if it's still too soft, add flour from reserve until you have a dough just dry enough to hold shape. If it's too thick, add up to 1/4 cup of water.
Flour your hands with the rest of reserve and shape the dough into about a 6.5" dome in center of pan or sheet. With a sharp knife, cut a deep cross in the dome, down to within a half inch of bottom.
Bake in center of oven for 30-40 minutes, until golden brown and a toothpick inserted in center comes out clean.
