Ingredients

    Chicken Breast, no skin, 4 breast, bone and skin removed
    Spinach, frozen, 1 package (10 oz) yields
    Feta Cheese, 8 oz
    Egg white, 2 serving
    Mozzarella Cheese, part skim milk, 4 oz
    Bread, italian, 2 oz
    Cream of chicken soup (optional)

Directions

Heat oven to 350 degrees

1. Defrost frozen spinach and drain.
2. Separate egg whites, place in a bowl and whip.
3. Mix spinach, feta cheese and garlic together.
4. Split chicken breasts in half (butterfly) ... keeping connected (like a hinge)
5. Place spinach mixture in the middle of the breast.
6. Dip breast in egg whites and then directly into bread crumbs.

Place on a greased cookie sheet and bake for 20 minutes.

Turn breast over and continue to bake for an additional 20 minutes.

Sprinkle top of chicken breast with mozzarella cheese and bake until melted.

Warm up cream of chicken soup and top each breast with soup.
