Introduction

Number of Servings: 6

Ingredients

    1 package firm tofu
    2 medium ripe tomatoes
    10 leaves basil
    1 tablespoon fresh oregano
    3/4 cup balsamic vinegar
    2 tbsp olive oil (optional, included in nutritional calculations)
    salt to taste (not included in nutritional calculations)

Directions

Dice the tofu and tomatoes and finely chop the herbs.

Place all ingredients in a bowl of appropriate size and allow to stand for a few minutes, so that the flavors can mingle.

Enjoy!
