    10 (8 inch) flour tortillas.
    2 cups cheddar cheese.
    1pkg fatfree cream cheese
    14 oz can enchalada green chilli sauce
    2 lbs chicken cut up or shredded.


cook chicken ( i bake mine in the oven until done usally 20 mins on 350 degrees) chop or shred chicken. add cream cheese to hot chicken and stir until blended ( use room tempature cream cheese). lay tortillas on counter and add chicken mixture to each tortilla roll up . place small amount of enchalada sauce on bottom of 9 x 13 pan. place all the rolled tortillas in pan seam side down.... cover with remaining sauce and top with cheddar cheese . cover pan with tin foil bake in 350 degree oven for 30 mins or until cheese is melted...

    This was pretty good. I was unsure at first because I usually make enchaladas with salsa but I will be making this recipe again in the future. - 8/11/07
