Ingredients

    1 16-oz can tropical fruit salad in natural juice
    1 14-16 oz package soft or silken tofu, drained
    1/2 ts coconut extract
    1 5.1 oz package banana instant pudding

Directions

Drain fruit. Save the juice and set fruit aside. Blend tofu, fruit juice, and coconut extract in blender for 2 minutes until smooth. Add pudding mix and blend for a few seconds more. Add fruit and pulse until fruit is in small pieces. Spoon into small cups and put in refrigerator for 10 minutes to chill and set.
