preheat oven to 350. coat 8 muffin tins w/ cooking spray. spread potatoes on bottom and press into sides. place in oven for 10 min.
beat eggs and flax seeds. Add veggies and cheese mix to combine.
remove pan from oven when potatoes are done. Press down firm to make a mini pie crust. potatoes should cover bottom and sides of tins. pour 1/4 cup mixture into each tin.
Bake for about 15min or until egss are set. Remove from oven let sit for 5 min.
