Ingredients

    2 mashed ripe bananas
    2 T canola oil
    1 egg
    1/2 cup fat free milk
    3/4 t vanilla
    2/3 cup wheat flour
    1/2 cup quick cooking oats
    1/4 cup sugar
    1 3/4 t baking powder
    1/2 t gound cinnamon
    1/4 t salt

Directions

mix bananas and first 4 ingredients set aside.
whisk flour and the remaining ingredients.
Add the two mixtures together.
pour into 9 muffin cups.
bake for 16 minutes.

    I found this same recipe in the May 2007 issue of Health magazine and was going to submit it! These are very delicious! I think next time I make them I'll add some blueberries. - 7/5/07
