Ingredients

    16 oz bag frozen sweet yellow corn thawed
    2 - 15.5 oz cans balck beans, rinsed and drained
    1 each medium red, yellow, orange sweet peppers diced
    1 bunch fresh cilantro rinsed and chopped
    1/2 med red onion, chopped
    2 cloves fresh garlic, crushed
    2 T olive oil
    salt to taste

Directions

Combine all prepared ingredients in a large bowl and stir together. Store in refrigerator for at least one hour before serving. This recipe lends itself to mixing and matching different types of corn, beans, onions, and peppers. If you add tomatoes be sure to add them just before serving or add whole grape tomatoes. I estimate this makes 12 - 1/2 Cup servings.
