Introduction

Number of Servings: 20

Ingredients

    ½ cup (1 stick) butter, softened
    1 cup brown sugar
    1 egg
    ½ tsp vanilla
    ½ cup all-purpose flour
    ¼ cup whole wheat flour
    ½ tsp baking soda
    ½ tsp cinnamon
    ¼ tsp salt
    1½ cups old fashioned, uncooked oats
    ½ cup dried cranberries
    ½ cup chopped pecans or walnuts
    ½ cup coconut flakes

Directions

Heat oven to 350 degrees.


Beat together butter and sugars until creamy.


Add egg and beat well.


In a separate bowl, combined flour, baking soda, cinnamon and salt. Add to wet mixture and mix well.


Stir in oats, cranberries, nuts and coconut flakes.


Drop by rounded tablespoons onto an ungreased cookie sheet.


Bake 10 to 12 minutes or until golden brown.


Cool one minute on cookie sheet. Then, move to a wire rack to cool completely.

Makes 20 cookies.
