Introduction

I adapted the recipe from the clean eating magazine, substituted the agave for the sucanat (the original calls for 1/3 cup sucanat) These are not overly sweet, but have a great citrus flavor..... Ingredients

    2/3 cup skim milk
    juice of 1/2 lemon, whole lime
    1 1/2 cups spelt flour
    1 cup brown rice flour
    1 tsp baking powder
    1/2 tsp baking soda
    3 TBSP agave syrup
    zest each 1/2 lemon, whole lime
    2 egg whites
    1/4 cup olive oil
    1 tsp vanilla
    olive oil cooking spray

Directions

sift all the dry ingredients in a bowl. In a large measuring cup (2 cup capacity) measure and mix wet ingredients. add wet to dry. mix until moistened. plop 1/3 of batter on greased pan, shape into circle, 1" thick....do 2 more times. bake at 350 for 15 minutes until golden brown, cute each circle into 8 wedges while still warm...allow to cool and enjoy.
**before baking you could sprinkle them with some cinnamon sugar to add some sweetness. I didn't, and they are just fine...
