Introduction

Ingredients

    6 to 8 cups Fresh Tomatoes when in season.
    or 3 to 4 cans do Diced Tomatoes, No Salt Added, do not drain
    Cilantro, raw, 1/2 cup or to taste
    Juice from 1 lime
    Olive Oil, 1 tbsp
    Vinegar, 1 tbsp
    Sea Salt, 1/2 tsp
    Sugar substitute, 2 tsp. I like Truvia
    Fresh Chives, 1/2 cup chopped
    Garlic, 3 cloves or to taste minced
    Yellow bell Pepper, 1 chopped chopped
    Red bell Pepper, 1 chopped
    Orange bell Pepper, 1 chopped
    Jalapeno Peppers, 2 seeded & diced
    Celery, raw, 1 cup, diced
    Sweet Corn, Fresh or Frozen, 1 cup
    Cumin powder, 1 tbsp or more to taste
    Black Beans, 1 cup fresh if possible (optional)

Directions

Chop, mix & enjoy. Refrigerate. We use approximately 1/2 cup on everything from eggs, fish, chicken, salad, scoop it, and cook with it.

    I added 4 avocadoes, 1 cup yellow onions, tripled the garlic, left out the Truvia and olive oil, and added a tsp. chili powder...very good stuff. Of course, the avocadoes won't keep like the rest of the salsa, so add them separately if not planning to use the whole batch all at once. - 2/16/09
