Introduction

Ingredients

    1/2 cup egg beaters
    1 tsp cinnamon
    2 tsp Splenda (or other sweetener)
    1/4 cup fresh blueberries
    2 Tbls Sugar Free Maple syrup
    Non-stick butter flavored spray

Directions

Spray nonstick pan with butter flavored spray. Mix together egg, cinnamon and sweetener. Cook much like an omelet until liquid is set, pulling sides in as needed. Flip entire thing like a pancake and continue to cook on other side to brown. Remove from pan and spray with butter spray, top with blueberries.
