Here is a dessert or snack just perfect for those times you are "climbing the walls" craving something sweet and something QUICK!! The recipe is actually meant for 8 servings, which would amount to 6 per person. Therefore, you're in control here, and they will last for many days (refrigerated) if you can limit yourselves to a couple. At only 25 calories per piece, there is also the benefit of a gram of protein plus a half gram fiber. So, how's that for rationalization!!! I hope you will love them. Ingredients

    Quick oats, dry, 2 cups (6 ounces)
    Chopped pecans, 0.25 cup (1 ounce)
    Carnation nonfat dry milk powder, 0.66 cup (2/3 cup)
    Jello sugar-free cook-and-serve CHOCOLATE pudding, (85g), full pkg dry mix
    Water, 1 cup
    Vanilla extract, 1 tsp
    Miniature marshmallows, 1 ounce (1/2 cup)

Directions

Serving size is ONE of 48 pieces. Think you can stop there???

In a large bowl, combine the oats and pecans, then set aside. In a medium saucepan, combine the dry pudding mix, dry milk powder, and water. Cook over medium heat until mixture thickens and starts to boil, stirring constantly. Remove from heat. Add vanilla extract and marshmallows, stirring constantly until marshmallows melt. Pour mixture over oat mixture in the large bowl. Mix well with a fork until well blended. Drop by teaspoonful onto waxed paper or parchment paper to form 48 cookies. Let set until firm. Refrigerate in tightly covered container.

    Very Good
    Pretty good. The texture's a little different than what I was expecting, but they are very chewy. Ignore the part about getting the chocolate mixture to boil, it gets thick as soon as you begin to stir, and it would burn before it boils. Just let it get very hot. Will make again! - 1/25/11

    This recipe is AWESOME!!! It satisfies the need to crunch into something while also fulfilling the need for something sweet. As with anything, to fully enjoy these cookies, savor each aspect of eating them. Experience the crunch, enjoy the slight melting sensation and chew til you can't chew no more - 4/18/10
